A Sunday Ride to Seadrift

We took a ride this afternoon with Dennis and Carol.

 We went to Seadrift on all the back roads.

 We met up with these two people who go out everyday and feed the injured Pelican. They net the fish
and feed  the injured birds who can not feed themselves

.... They don't peck at the fish they swallow it whole.

.. It was fun to watch . What a great thing they are doing.


Its very cold and windy

but the grass is green

The sun came out


All in all a very good day.......





God is good ......................all the time....

Donna's Dip...............These Texan's love it..

Tonight for movie time I am going to make my DIL ,s  great dip............................. again.

  It has always been a personal favorite of LJ"S.

 Dil spoils him and makes it often when we go to their home.

Everyone really likes it here. 

We have been blessed with great DIL's. 


ok now

 Yummy great dip.

In the bottom of a 9x13 pan spred
1 big block of soft cream cheese.  (8 oz)
1 Can of Hormel Chili
A can of small diced Chili's
top with 2 cups of Mexician Cheese
Put in 300 degree oven till cheese melts.
Serve with Resturant Chips... or chip of choice...

Movie night at the Beacon

Beacon 44 has a new Director of Recreation. Mr. Douglas Walker...

He has many events scheduled:
Tonight we had Saturday Night at the movies

He said afternoon water aerobics today  and  swimming  was canceled due to high winds and ice in the pond.

Water skiing in the ditch behind the truck is a possibility if we can get a bit more rain...

also
Movie night tomorrow night..... 6 ish or 7ish or some time of ish...

 Popcorn will be provided       ( maybe...)

It may be the Three Stooges..........Larry as Larry,  Dennis as Curly and Doug as Moe

or a cooking show from Emeril featuring Kenny.BBQing His famous  Texan Wild Hog....

Cast your vote and send it on to the Director of Recreation.....


LJ wanted to serve bread but Mary Jo wants to save it in case their is a shortage of penicillin this year but it was declined and voted on to give it to the ducks. 

A good time was had by all........

Holy Cow thats a big Potato

Alma's lunch. OK I know everything has to be bigger in Texas but this?????
This is half of the biggest potato I have ever seen.
1/2 of a potato stuffed with mmmmmmmmmmm just about everything.
How many people think Alma ate the whole thing??????
If you have broadband click on this picture and you can really tell this  is very very big.....

We had a great get together again tonight and whoa............. we are stuffed. Zara made Chicken and Noodles. YUM YUM
Tomorrow we should seriously not eat at all....
Cold front coming in should get down to 38 or so.....still better than -4

I am writing this here so I don't lose it....  :)

but feel free to try it..........NOT YOU ANNA you don't like Beans

TACO SOUP

1   1/2 pds hamburger brown
1 can hominy (yellow )
2 cans of pinto  (1 can Jalapeno, 1 can reg)
1 can Ranch style beans
2 cans of diced tomatoes  (1 of them Rotel tomatoes)
3/4# of Velveeta cheese
little water.

Yes Dennis and Carol are next to us...we may be parting ways soon in Feb
We are not sure where we are going  maybe an Army Corp park.  but not sure
We have thought about going down to the Valley to Bibleville
or maybe going and finding a place by my cousins  in San Antonio we are uncertain.  To cold to go home -4 this am.... 

Please say a prayer for George Reimer and his family, his daughter died yesterday.  May she rest in peace.  She loved the Lord and was a great lady.   George and his wife have  lost two daughters now.  Losing a child is one of the hardest painful things one can go through.  We are thinking of you George and here is a virtual hug....  love ya...

Hot Pepper Crackers......and they are really good

One box of good Saltine crackers (not generic)
place on edge in airtight container
mix in a container
1 1/3 cups of Canola oil.. ( has to be canola this can be generic if you so chose)
1 pack of dry ranch dressing  (not dip)
2 Tablespoons of crushed dried red pepper
mix well pour over crackers , cover, turnover every 20 or 30 min.
they are best next day...
mmmmmmmmmmm I forgot to ask him if you have to stay up all night and flip them....(smile)
I think we flipped them when ever anyone thought of it... :) then  ate  almost all of them...

A trip to Rockport




We had a great day going to Rockport and out to the Island at Port Aransas.
It was beautiful weather.  Not to hot and not to cold.
We took Rosie in for a fresh meal of oil....and some grease.. 
Then we went to the Aquarium 

                                        This star fish was way to cool.............. 
                                  Have you ever seen such a unique sand box for kids?  great idea

I fell in love with Rockport the first time I was there and love it even more each and every time we go.
It reminds me a little bit of Naples FL. 
But nothing in town was open...this must be off season. 
The weather has been fantastic.  We have no complaints on this end.

All in all it was a great day...

Port O'Connor's finest Crab...





For dinner at Rosie's Diner....

   jk  (just kidding) she is really not a crab.... well maybe :)

This is a picture of  Mary Jo Walker's Famous Stuffed Crab on the half shell. Can be bought in her shop in town Port O'Connor  or in Rockport..
And it was mighty good. This is going to be a main stay on our diet for the next three weeks. YUM YUM

Today was a beautiful day we put the awning out for the first time in a long time.
We varnished our new table also varnished the wood piece on the frig.
It looks great.

Great Texas Weather (finally)

It was a beautiful day in the high 70's. We went and  bought some stuffed crab cakes that  Mary Jo makes at her shop. We have tried the stuffed flounder and loved it.  Doug says the crab patties fried are even better.  So next time we will try these.
  LJ went to dentist. He was not to excited about this....but he was very impressed with the dentist.

Everything (food, gas, medical)  seems cheaper down here.  Other than Texas sales tax.  They tax food which we are not used to. 8%  So all in all it probably is the same.  We shopped at HEB which may be like a Texas Walmart.
Alma and Millie.
Yesterday was Alma's birthday.  So we had birthday cake tonight.
Her husband cooked beef and we had beef sandwiches they were great.


Alma was telling me about a Chicken dish  that Kenny makes that sounds great.
She said it is her favorite meal.  and it sounds pretty great to me.


He pounds chicken breasts till they are pretty flat
put a bag of spinach
with Phil Cream cheese mix it up
add 1/8 tesp of nutmeg
pile it on top of chicken breasts
roll them  up
dip in egg wash
roll in cracker crumbs.
drizzle butter on top
bake 30 min.
Now we have not tried this but it sure sounds good.  Let you know at a later date how successful we are making this dish.
Tomorrow we may go to Rockport to the Aquarium.  LJ has wanted to go for a while.
